I already have several recipes on my blog and there are so many more. Basically grains, lentils, dried fruits, nuts etc. everything can be converted into a ladoo. Motichoor ladoo are made with gram flour or besan as we call it. Motichoor ladoos prepared from gram flour are tiny droplets of flour that are fried, later immersed in thick sugar syrup and finally shaped liked ladoos.

Steps to make Motichoor Ladoos:
  1. Strain the besan on a strainer & keep it in a bowl. Now add baking soda and mix everything well. Now gradually add water, little by little and make a flowy consistency as shown in the image. There should not be any lumps in the batter. Now add a pinch of orange food colour and mix it well.
  2. Now heat a kadhai, pour the ghee in it. When the ghee becomes hot. Pour a tsp of the batter over the strainer & spread it a bit. The batter will fall down into the oil drop by drop. Now fry them for few seconds on medium flame, then transfer the boondis into a bowl. Repeat the same procedure again & again so that all the boondis get fried well. Remember to pour only 1 to 2 tsp batter at a time & don't rush to put more at a time or else the boondis will get stick to each other.
  3. Now your boondis are ready. Now take another pan. Put half cup sugar & 1/4th cup water into it & boil it until sugar dissolves. Now add a pinch of food color, a pinch of elaichi powder and mix well. Let the sugar syrup cook for some more time. The sugar syrup consistency should be like a bit sticky like, before reaching single line consistency.
  4. Now add the boondis to the syrup & mix everything well. Cook it in a low flame for 5 to 7 mins. Now add chopped pistachios/melon seeds then cook it for 2 mins more on a low flame. Now when it starts becoming a bit sticky, slowly and gradually add milk to it, add little by little at a time. Cook for 2 to 3 mins more.
  5. Now switch off the flame. Grease a plate with some ghee and pour the mixture over the plate. Let it cool a bit. Remember it should be lukewarm. Now apply some ghee on both of your palms & start making ladoos out of it. Decorate the ladoos with some pistachios & serve.

Admit it, once you start having it, you cannot just hold back at one. Motichoor Ladoo or Motichur Ladoo is a round-shaped sweetmeat made from fine, tiny balls of besan.
