  2. Get 3 cup dosa rice
  3. Prepare 1 teaspoon / to taste salt
  4. Prepare 1 cup Jaggery powder
  5. Prepare 1 bowl grated fresh coconut
  6. Take 10 banana leaves
  7. Make ready 1/4 teaspoon Cardamom powder

Instructions to make Jackfruit genasale / stuffed steamed duming:
  1. 3 hours Soaked rice is ground to make smooth and thick batter. Add salt and mix.
  2. Mix coconut,Jaggery powder and Cardamom powder, keep aside.
  3. Rice batter spread on pre-wilted and cleaned banana leaves, and add jackfruit pieces. Add the coconut mixture into half side. Wrap up the banana leaves (see the picture)
  4. Steam cooked in a steamer (idli cooker) for 30 minutes
  5. Serve pickle and ghee or coconut oil and chutney

Put this batter in a thick bottomed vessel and keep stirring the mixture, making sure that it doesn't stick to the bottom of the vessel. Stir this mixture continuously over a medium flame until it becomes solid as shown in the picture below. Ela Ada is a sweet coconut-jaggery stuffed rice flour cakes/parcels steam cooked in banana leaves. It is quite similar to Genasale or Patholi or Kayi Kadubu we make in my native of Udupi-Mangalore in terms the ingredients used and the cooking technique.
