  1. Take 1 small raw / green jackfruit, cut into cubes
  2. Make ready 1/2 cup green peas (opt)
  3. Take 3 tbsp. mustard oil
  4. Take 2 bay leaves
  5. Make ready 2 dry red chilies
  6. Take 1 tsp. cumin seeds
  7. Get 1 " cinnamon stick
  8. Take 2-3 green cardamoms
  9. Make ready 4-5 cloves
  10. Take 1 onion, chopped
  11. Prepare 1 tbsp. ginger-garlic paste
  12. Make ready 1 tsp. tomato paste / puree of 1 tomato

  14. Prepare 1/2 tsp. turmeric powder
  15. Prepare 1 tbsp. coriander-cumin powder
  16. Get 1 tsp. garam masala powder
  17. Prepare 1 tsp. red chilli powder
  18. Take 1 tsp. coriander leaves
  19. Make ready 2 green chilies (opt)
  20. Make ready 1 tsp. ghee

One must try it to believe it. Though, it can be cooked in vegetarian version as well, but, the mutton taste can be brought only if it is cooked in non vegetarian way. Green jackfruit or the unripe fruit is called Echore in Bangla (Aechor) and is sometimes termed as "Gaach Pantha" (Vegetarian version of red meat). While Echore (Green Jackfruit) can be used to make curries, koftas, cutlets and a lot more, the ripened fruit popularly known as Kathal is equally tasty and is eaten as a fruit during summers.

Steps to make Echore Kosha (Green Jackfruit Curry):
  1. In a small bowl, mix together ginger-garlic paste, tomato paste and all the dry spices with some water and keep aside for 5 minutes.
  2. Heat 1 tbsp. oil and saute the jackfruit till light brown.
  3. Heat remaining oil & temper with bay leaves, red chilies, cinnamon, cardamom, cloves & cumin seeds. Saute for a few seconds.
  4. Add the onion & saute till light brown.
  5. Add the spice paste & stir fry till the oil separates.
  6. Then add the fried jackfruit followed by the green peas & green chilies.
  7. Add 1 cup water. Pressure cook for 4-5 whistles. When done, add ghee & mix well.
  8. Garnish with coriander leaves & serve with either hot steamed rice, - chapati, poori or paratha.

Raw Jackfruit is also known as 'Gach Patha' in Bengal, which literally means "tree goat". Echor or raw jackfruit is compared to goat meat because its texture almost matches with the goat meat and the nutritional benefits are also the same. Actually it is cooked with the same spices like goat meat and the curry also tastes like meat only. But you may add if preferred. It is almost a dry preparation with very little gravy and can be relished with plain steamed rice, pulao, ch.
