This curry is a low-fat version of my mother's original recipe. Jackfruit is a great meat substitute, especially in curry! Indian spices bring great flavour to this curry but it is still suitable for the whole family, even the kids will love this! Vegan and gluten-free - this is a great vegan family dinner, easy to make and really tasty.

Instructions to make Jackfruit Curry:
  1. First of all apply oil on hands and on knife and cut jackfruit into pieces.
  2. Now heat up oil in a pan, add jackfruit pieces in it and fry them for 10 minutes in low flame. Transfer these pieces in plate.
  3. Now heat up oil in the same pan, add chopped onion, garlic, ginger, red chilli and roast it till onion turns golden brown.
  4. Transfer this mixture in a mixer jar and make a fine paste.
  5. Now heat up oil in a pan,add mustard seeds and let them crackle.
  6. Now add grinded paste and cook it till oil starts leaving along the masala paste.
  7. Add red chilli powder, turmeric powder, garam masala, cumin powder and mix everything well.
  8. Add fried jackfruit pieces and mix them well with the masala,add water as required.
  9. Now in a plate take water and keep this plate in the pan and cook the curry till jackfruit pieces becomes soft.
  10. Jackfruit Curry is ready.
  11. Serve hot with rice or roti.
