  1. Get 1 bowl chopped watermelon rind (white part)
  2. Get 1 tbsp oil
  3. Get 1 tsp mustard seeds
  4. Prepare 1/4 tsp turmeric powder
  5. Get 1 tsp red chilli powder
  6. Prepare 1 tsp coriander cummin seeds powder
  7. Prepare 2 tsp jaggery
  8. Get to taste Salt
  9. Take As needed Finely chopped fresh coriander leaves

Watermelon is a good source of Vitamins A and C, and it is also rich in amino acids, minerals and is an antioxidant. Method Heat mustard oil to high and lower the heat. Add dry red chilli, asafoetida and stir. Once mustard seeds start to crackle add fennel seeds and onions.

Instructions to make Watermelon Rind Subzi:
  1. Peel off the green part of watermelon rind. Chopped white part rind along with little thin layer of red juicy watermelon fruit. In kadhai heat oil. Add mustard seeds as they splutter, add turmeric powder. Add chopped watermelon rind.
  2. Add salt and 1/2 glass of water. Mix, cover and cook for 10-12 mins or till chopped watermelon rind pieces are tender.
  3. Add red chilli powder, coriander- cummin seeds powder and jaggery. Mix and cook for 2 minutes.(If there is more water in subzi,cook for few minutes more)
  4. Sprinkle finely chopped fresh coriander leaves and Serve/ Relish Delicious Hot Watermelon Rind Subzi with dal & rotis.
